How to make mutton biryani

Mutton biryani



The mutton biryani is the other name for royal biryani in my opinion. The richness in this dish is too much as the aroma itself is enough to tell you whether you can resist it or not. Apart from that the taste is really undeniable and it cannot be eaten without being shared so you better share it before people come and take it from you. Enjoy 


Cooking tip: Before cutting an onion, you can either soak it in water or keep it in the fridge for about 10 minutes so while cutting the onion your eyes don't start watering.

Ingredients


500 grams of mutton cut into 2 inch pieces 

1 1/2 cups basmati rice (soaked)

1 tbsp butter

1 tbsp oil

4 black cardamoms 

1 tsp black peppercorns

5 to 6 green cardamoms

3 to 4 cloves

4 green chillies (slit)

Ginger cut into 1 inch (thin strips)

130 grams bhuna masala

1 1/2 cups yogurt

1/2 tsp red chilli powder

1/4 tsp turmeric powder

1/2 tsp green cardamom powder

1/2 tsp garam masala

2 medium potatoes cut into large pieces (optional if you want to put) (taste  wont change)

A few strands of saffron (kesar)

kewra jal (screw pine water)

2 tsp rose water

Salt to taste


How to prepare the dish


Take a pressure cooker and heat oil and butter in it. Add black cardamoms, green cardamoms, black peppercorns, cloves, ginger, green chillies and mutton and fry on high heat for about 3-4 minutes.

Then add 3 cups water, bhuna masala and mix well. Cover the pressure cooker and cook until 8-10 whistles are given out.

After the whistles remove the lid when the pressure on the lid reduces completely and then add green cardamom powder, red chilli powder, turmeric powder, garam masala powder, potatoes, saffron, screw pine water, rose water, yogurt and a little salt and mix well together.

Then wash the rice and drain it. After that add it into the pressure cooker and then add or sprinkle 1/4 cups of water and cook until 1 whistle is given out.

Finally serve hot and enjoy with your family and friends.
