Sev Puri
The sev puri is a world famous street food. Served as dessert or as main course, both situations will match it's style. The veggie topping and chutneys will make you want it even before its made. Finally don't forget to share and enjoy.
Ingredients
Dough for papadi (puri)
1 cup plain flour
1 cup whole wheat flour
3 tbsp ghee
1/2 cup water
oil for frying
Topping
2 boiled potatoes (mashed)
1 onion (chopped)
1 tomato (chopped)
fine sev namkeen
some green chutney
some mithi chutney
2 tbsp chopped coriander(leaves)

Method
First take a medium bowl and mix plain flour, whole wheat flour, ghee and rub it with your finger tips. Then add just enough water to make a stiff dough and keep it aside for 30 minutes.
After that divide into 4 ball (the dough) and roll out each ball thinly. Then prick with a fork and cut into small rounds with a plain round cookie cutter. Deep fry on very low heat until the colour changes to light golden brown.
To serve
Arrange puris in a plate and place 1 tsp mashed potato on each puri. Then sprinkle chopped onion and tomato on top.
Put 1/2 tsp of hari chutney and 1/2 tsp of meethi chutney on each puri and sprinkle sev and garnish with coriander and serve.
