How to make vegetable manchow soup

Manchow soup




The vegetable manchow soup is a healthy and famous soup. It's flavour and looks make you go crazy for ti. The blend of ingredients make it extra beautiful and glamorous. The taste of the soup is so good that you will not even think of sharing it with others but they will come along and make you share it . Finally share and enjoy!!!

Cooking tip: While cooking a cauliflower or cabbage, simply just add a little bit of vinegar to it. This will remove the smell.

Ingredients


  • 1/4 small cabbage (chopped)

  • 1 medium carrot (chopped)

  • 2 to 3 button mushrooms 

  • 2 to 3 black Chinese mushrooms (soaked)

  • 1/2 medium green capsicum (chopped)

  • 1 spring onion

  • 2 tbsp oil 

  • 1/2 inch ginger piece

  • 2 to 3 cloves of garlic (chopped)

  • 2 inches bamboo shoots

  • 4 cups of vegetable stock

  • 2 green chillies 

  • 1/2 tbsp red chilli sauce

  • 2 tbsp soy sauce

  • 50 grams of tofu

  • 3 tbsp cornflour/ corn starch 

  • salt (to taste)

  • 1 cup deep fried noodles 

Instructions


First slice a spring onion. Then heat oil in a non stick wok (something like a pot). Then slice the button mushrooms and add spring onions to the oil in the wok along with garlic and ginger and toss.

After that add the carrot, cabbage and mushrooms. For the mushrooms chop it roughly and add to the wok.

Then chop the bamboo shoots into small pieces and add 4 cups stock and green chillies to the wok. Then add red chilli sauce and soy sauce and mix well together.

After mixing cut the tofu into ½ inch cubes and then add to the soup. Mix cornflour with ¼ cup water and add to the soup and cook till it thickens (stir till it thickens).

Then add salt and mix chopped capsicum (reserve some for garnish and add the rest to the soup) and mix well together. Then sprinkle the deep fried noodles on top with the reserved chopped capsicum. 

Finally don't forget to share and enjoy.
